Red Curry Shrimp

This was my very first attempt at red curry, and I have I say it was pretty good. There are some changes that I would make for next time, but overall I’m very happy with the finished product.

Here is what was in the mix:

454 g of jumbo shrimp
1/2 yellow pepper
1/2 red pepper
1 onion
1 tsp of minced garlic
1 tsp of minced ginger
1/4 tsp of cumin
1/2 tsp of chilli powder
2 Tbsp of red curry paste
1 400ml can of light coconut milk
2 Tbsp of coconut oil (can reduce the amount)

1. Mince ginger and garlic. Chop onion and peppers.
2. Bring pan to medium heat, add coconut oil ginger, garlic, and onion. Sauté for 5 minutes add peppers. Sauté until onions and peppers are slightly tender.
3. Add coconut milk.
4. Add remaining spices and red curry paste. Sauté over medium heat until sauce boils.
5. Lower heat, and add shrimp.

Before I got cooking today I walked to and from the grocery store, which is a bit over 6km round trip. The distance doesn’t bother me, but the humidity does. The last time I checked the weather the humidity was 97%. Honestly I know everyone has a hard time when it’s this humid, but for this British Columbian with strong Scottish blood running through my veins, it is almost unbearable. Lucky for me, I’m heading out to BC in about a week and a half, so I know I won’t have to deal with the humidity too much longer.



Daily Eats

Well you saw my breakfast and lunch today already. For an afternoon snack I had some carrot sticks and hummus, and I finished off the last of my blackberries and raspberries. For dinner I had homemade fries, and chicken stuffed with broccoli and cheese (it was in the freezer, and I ate it, instead of throwing it out). I know I’m a terrible person eating overly processed foods. I’m working on it, okay.

After dinner Kurt and I went to yoga, which felt really good. My shoulders felt really tight tonight, and hopefully I have loosened things up a bit for my weight lifting session tomorrow. I came home to watch old Simpsons episodes, and snack on almonds.

I plan on working more on photographing my food for all of you to see. Hopefully it will keep me a little more accountable, even if I’m sharing my boring eats.



A Morning in the Sun

Good morning,

Yesterday I stayed at home until 9am to see if I would get called into work. I didn’t get a call so I headed outside for a jog/ walk up a hill by my house. The route I took was straight up and down the hill for a total of 5.4km. It was so hard, I only recently started running again on the treadmill. This was my first outdoor run since January, and it was up a hill! The only way I will improve though is if I’m consistent and push myself.

Afterwards I came home showered, caught up on emails, and had an early lunch of tuna mixed with miracle whip, rice crackers, cucumber, hummus, and two chocolate cookies. I also ate a peach which didn’t make it into the picture.

It was delish.

After relaxing and reading outside, I took a walk into downtown Trenton to do some errands. It was a fantastic sunny day.



Easter Ribs

Happy Easter,

Yesterday I started my day with NROLFW, followed by a trip Kingston with my bf, and a couple of friends. It was a nice sunny day, but still a bit cold outside.

This morning I did some cleaning and then got my Easter Ribs in the slow cooker.

My bf got to leave work early today around noon, so we went for a mid-day workout together. I got my cardio on today, with 30 minutes on the treadmill, followed by 30 minutes on the elliptical.

Tonight my bf and I enjoyed our Easter dinner, it was really yummy.

A new week, a new start

Today I started my Monday morning the way any unemployed girl should. I checked job postings, worked on my cover letter for international teaching jobs, and phoned three different places about potential volunteer opportunities. I need to keep the job search momentum going, for the rest of the week.

Next on the agenda was a morning walk, and running some errands. I made a trip to bulk barn where I picked up some, new to my ingredients that I am going to try out in some recipes later this week. I promise to share any kitchen successes.

Physically, today was a rest day, and I needed it! My upper back is tight right now from yesterday’s lifting session.
