Easter Ribs

Happy Easter,

Yesterday I started my day with NROLFW, followed by a trip Kingston with my bf, and a couple of friends. It was a nice sunny day, but still a bit cold outside.

This morning I did some cleaning and then got my Easter Ribs in the slow cooker.

My bf got to leave work early today around noon, so we went for a mid-day workout together. I got my cardio on today, with 30 minutes on the treadmill, followed by 30 minutes on the elliptical.

Tonight my bf and I enjoyed our Easter dinner, it was really yummy.

I love myself, however I think of myself as a “big girl”

I want you all to know that I did not wake up one day and realize I was fat, and suddenly gained 50 pounds. I’ve been fully aware of my size for as long as I can remember. I also have avoided the camera for as long as I can remember.
When I was 20 years old I lost 50 pounds, but kept all of the emotional baggage, including the baggage that only allowed myself to see a “big girl” in the mirror. When twenty pounds crept back on, when I transitioned to a desk job, I thought, “No big deal, I’m just a big girl anyways”.
Then I started college when I was 24, and I managed to gain 43 pounds in eight months! I can hardly believe it myself, my eating was completely out of control. During the past five years my weight has yo-yoed, in a 30 pound range. Whenever I say I’m going to change my life and take control, I bring out the scale, a tap measure, and a notebook. Thus making myself fully aware of just how big I have gotten.
Why is it different now you ask? If my life has been full of weight loss failure, what makes this time different?
First of all, I’m sharing it with all of you, so public humiliation can be one extrinsic motivator. Secondly, I have a different standard of success. Success will not mean losing 50 pounds. What I want is to: accept my size, be healthy, fit, energetic. I will not allow my success to be defined by a number on the scale, but by the food on my plate, the amount of weight I can dead lift, the time it takes me to run a mile, and the amount of time I spend on my yoga practice.

I had a great start to my Wednesday!
I got a part time job teaching grade four science to a couple of home school students. I am excited to get my first career related paid position. I have continued working on job hunting each morning this week, which is a success for me. Also yesterday I heard back from an elementary school principal who would love to have me volunteer in her school, and mentioned the possibility of some paid scribing work at the end of April.

On Tuesday, I had a kick ass nrolfw workout, so today I rested and just went out for a 3km walk around my neighbourhood.

In the afternoon I made protein oatmeal cookies, and I forgot to take a picture. They were really good, so I will share the recipe and pictures soon. After making and eating the cookies I went out to do a couple of errands including grocery shopping.

I came home and immediately got started on dinner: meatballs and spaghetti squash.

I roasted the spaghetti squash at 400 .F, then I started prepping my vegetables. I used:

4 garlic cloves
1 large onion
1 pound of mixed peppers
Which I sautéed with 1 tablespoon of olive oil.
Then I cheated, I added a jar of tomato sauce to the pan, followed by 1tsp of basil, and 1tbsp of oregano. I continued cheating by adding pre made angus meatballs to the mix.

Here is a picture of the finished product, with bits of goat cheese on top. It was super yummy, and my boyfriend loved

A new week, a new start

Today I started my Monday morning the way any unemployed girl should. I checked job postings, worked on my cover letter for international teaching jobs, and phoned three different places about potential volunteer opportunities. I need to keep the job search momentum going, for the rest of the week.

Next on the agenda was a morning walk, and running some errands. I made a trip to bulk barn where I picked up some, new to my ingredients that I am going to try out in some recipes later this week. I promise to share any kitchen successes.

Physically, today was a rest day, and I needed it! My upper back is tight right now from yesterday’s lifting session.
